Barry Callebaut Names U.S. Chocolate Master
Chicago — Jean-Francois Suteau has been declared winner of Barry Callebau’s World Chocolate Masters competition in Chicago, earning him the title of U.S. Chocolate Master.
Suteau, executive chef at the Greenbrier Hotel in White Sulphur Springs, WV, beat three finalists to secure the top spot based on his artistry, the taste of his creations, his adherence to the “architecture of taste” theme and his technical skills.
Each finalist was required to present the panel of chefs judging the competition with a chocolate showpiece, a molded praline or bonon, a gastronomic chocolate dessert and their own interpretation of a donut.
Jove Hubbard, of The James Hotel in Chicago Todd Owen, Executive Pastry Chef at Old Edwards Inn and Spa in Highlands, NC and Evan Sheridan, pastry chef at Old Cathedral Hall University Club of Chicago were the other three finalists.
Suteau will go on to compete at the World Chocolate Masters contest later this year against top confectioners from 20 countries.
